Its first nose starts on a modest, humble note revealing gentle aromas of melted butter, dried thyme, and freshly sourced honey. Should you give it some time – leaving the bottle open, or decanting it for a half an hour – it opens its warm-hearted soul and endless sophistication bestowing you with a sensation that you are drinking a freshly-baked blueberry cheesecake. On the palate this expressive yet ethereal champagne is broad and explosive, yet its energy and acidity keep it beautifully light at the same time. Vinous, creamy, yet refined and elegant, it leaves you with a pleasant sensation of sweet yeastiness and slight smokiness in a long memorable aftertaste. Ideal champagne for cozy friends-and-family evenings over home-made creamy pasta with mushrooms or truffles, or a traditional winter-time fondue.
60% Chardonnay, 30% Pinot Noir, 10% Meunier from the 1er Cru villages Cumières and Hautvillers.
Vinified in a combination of the oak barrels made in the village of Damery, where this famille vigneronne lives and makes their champagnes, and the second-use oak barrels that previously held Chablis.
