A vintage Champagne tasting in London included this 50+ year vintage.
A darker yellow with a warm orange tone. Tiny bubbles, present initially and fade as the minutes pass by.
Aromas showed some oxidisation. Some dried yellow stone fruits, prune, dark honey, metals, saline.
Flavours showed some dried stone fruits, prunes in syrup, flaky pastry, saline. Umami style is slightly spoiled by an undertone of oxidised flavours to spoil what are still intense layers of flavours.
This must have been a pretty decent Champagne if enjoyed at least 10 years prior.
