Tasted during visit to Bollinger in Ay in 2020.
Again a treat to retest this extraordinary wine. Clearly in the Pinot, (old) oaked family style, but with amazing intensity and concentration. From ingrafted vines, “layered” to maintain continuity of stock, and tiny yields from this very special vineyard site behind the Bollinger House. The wine is both fresh as well as nutty and rich. For me a food wine, bring on Lobster Thermidor.
