Super interesting Champagne as it started off giving elegant notes of cream and caramelized lime. It really reminded me of key lime pie but with much more subtlety. However, after about 30 minutes in the glass there were powerful notes of pecans and pastries that I was not expecting so quickly after opening. On the palate there were small to medium bubbles leading to a fresh crisp finish to start off with but I really started to enjoy the Salon after it had opened up and risen a few degrees from serving temperature. I would highly recommend trying this vintage as it was a great experience. It was an delicate champagne but reminded me of something like a lees aged burgundy with next level craftsmanship from the vintner.
