The ullage was good and clarity fine. No previous storage history, so we are delving into the unknown.
Perfectly chilled and cork opened and left to rest for 30 mins. Poured into wide bowled Lehmann glasses and temptation resisted for a further 5 minutes.
A darker yellow to slight browning colour. Touch of sediment / cork (at bottom of bottle). Random tiny streams of bubbles upon initially pouring that are fading gradually, persistence lasted until first sip when movement in glass of wine caused disturbance.
Aromas are a smoky savoury expression with toast, baked apricot skins, mushroom and a growing display of oven roasted peanuts.
Flavours are certainly umami and no presence of any fresh fruit or floral, we have certainly moved on to the stage of toasted nuts, wood, coffee along with some faint dried stone fruits. From mid palate to close a salted roasted nuttiness presence increases. Very long length in the palate.
It is certainly the time to drink the wine and I feel it is even slightly on the decline though this bottle was served fresh from the cellars of Dom Perignon.
