Enjoyed live on the Mike Graham Show - A celebratory bottle for the 100th bottle to appear on the #PlonkoftheWeek Show.

This bottle had a relatively low, below neck level, ullage. The colour was showing as a shade of brown inside the bottle, not too dark, but some oxidisation most certainly.

An online purchase, a few hundred £'s, so here we go:

I did not expect that, I very tiny pop and hiss from the opening of the bottle. Are we do have a special, special bottle here? No, there was no storage history given on this purchase.

We've a dark copper colour, I would not disrespect the wine to say it was brown at all. There are no bubbles, possibly a tiny stream, but this might be my imagination. I am trying to stay focused on the wine despite showcasing this wine on a live broadcast channel with nearly 15,000 live viewers!

Aromas are savoury with a tiny representation of dried dark berried fruits, more towards dried prunes in syrup. Smoky, ham, coffee, mushroom are strong and persistent. Relax (I wish I could have) and savour these aromas...

Flavours are what the nose tells us - It's savoury, dark in character from salted long aged Prosciutto di Parma, coffee and most certainly a nutty close. The flavours persist immensely even as I speak on the show, a few minutes later they are still there and, dare I say, becoming richer in character.

This is an aged Dom Perignon, nothing like what the wine maker (Dominique Foulon (1976–1990)) would have initially wished the wine to be presented as, but nonetheless a great study on how these wines age and evolve.

I have one more bottle in my collection. A slightly better ullage and colour. I await another live show to present it on!
